Carragheen is a bushy reddish-brown plant which grows abundantly along the Irish Coast, hence why it is also known as Irish Moss. It has been used for centuries for its natural gel which is extracted when simmered in water or milk. It is therefore used in many food products because of its emulsifying and gelling properties. It is used to thicken foods and it produces a colourless jelly like consistency, which is a vegetarian’s answer to gelatine.
It has been considered to have health benefits in Ireland as it was traditionally used as a cold and cough remedy.
