Carragheen Dessert

Ingredients:


  • 10g Carragheen
  • 500 mls of milk
  • Tsp of honey
  • Lemon juice
  • Lemon zest


1. Rinse the Carragheen and remove any shells.


2. Place the Carragheen in a pan with the milk and allow to soak for 10 minutes.


3. Bring to the boil and allow to simmer gently for 20-30 minutes.


4. Strain the mixture through a sieve.


5. Mix in a teaspoon of honey, a teaspoon of lemon mix and lemon zest to taste.


6. Pour into moulds and allow to set.
